Good news! Last week I ordered a bunch of flours from Amazon, they arrived on Friday! I order 5 kinds, mostly basic ones that I’ve seen used in many Gluten Free recipes. Amazon sells in bulk, so I got 4 of each type. I haven’t done all the calculating yet, but it’s much cheaper to buy it like that as opposed to getting it at Publix or Whole Foods, especially since we have Amazon Prime, free shipping for the win!

I’ve managed to be pretty successful with my GF cooking this week! And pretty, uh, bold? I’d say at least, for just starting this GF diet and all. On Monday, I was craving a potsticker, so.. I did what I think most GF people now do, I made them (I don’t want to know what that’d cost at the store!). I adapted the recipe from @gardenofglutenfree.com. The dough recipe worked great I thought, but I changed the filling for my tastes. I’ll post the ingredients that I used here…. I love some cabbage & rabbit food in mine – but I recommend clicking over to her site for step-by-step instructions. I don’t own a tortilla press or a little pot sticker gizmo, I did it all with a rolling pin and a fork. I guess I wasn’t expecting it to work, because I didn’t take but one picture until at the end. This recipe made 24 pot stickers, so I cooked up about 9 and froze the rest! I’m trying to stock up our freezer with GF options, so hubs has something easy to cook when I’m at the restaurant all day.
Gluten Free Pork Pot Stickers
Ingredients:
Dough
- 1 cup white rice flour
- 3/4 cup tapioca flour
- pinch of salt
- 2 Tbsp oil
- 2/3 cup just boiled water
Filling
- 1/2 lb. ground pork
- 1 cup cabbage slaw mix, cooked until tender
- 2 green onions, minced
- 1 clove garlic, minced
- 1 tsp ginger, grated
- 1/4 tsp sesame oil
- 1 tsp GF soy sauce/Tamari
- 1/2 tsp salt
- pinch of ground pepper

They cooked up great I thought, only one fell apart (can we guess which one? :)) Served these with some fried rice, yummo!

Don’t be alarmed, that’s not all I made this week. I also made some delicious GF pancakes yesterday, I do love breakfast for dinner. And tonight, I made homemade Chimichangas! Those recipes will follow soon. This is all you get for now. Hubs approved all of them though, he seemed quite pleased/impressed… which makes me feel good inside. It’s encouraging that everything GF this week has turned out pretty well, I was really worried about my ability to make things we love with wheat flour taste good without it… Turns out, it’s not so bad! I have yet to attempt a cake or bread, both things in which I love dearly… Maybe next week I’ll give it a whirl.
